Its production takes place through modern enzyme conversion techniques starting from sucrose. Like sucrose, it is digested in the intestine, even if its digestion occurs more slowly. The structural characteristic of isomaltulose molecules bonds (alpha (a) -1,6-glycosidic) is that they are more stable than the ones of sucrose molecules, therefore, interestingly, they are very appreciated by sportsmen who want to maintain optimal performance and blood sugar and insulin levels significantly lower than other sugars. This particular type of bond existing between its two components (fructose and glucose) slows down its absorption rate. Subsequently, our intestinal disaccharidases, which are the enzymes capable of breaking the molecular bond existing between the two sugars forming the disaccharide, will favor their subsequent absorption and bioavailability, proceeding much more slowly for the isomaltulose than for other disaccharide sugars such as sucrose. Consequently, glycemia and insulin levels will have a decidedly lower rise and less oscillations, widening the temporal extension of the glycemic curve, making isomaltulose a slow-release energy source that can support the body even during prolonged and intense training without performance drops due to hypoglycemia or annoying gastrointestinal disturbances (frequent when using other simple sugars).
